Tangy Summertime Lentils and Radish

  • 2 cups water
  • 1 cup dry lentils
  • 1 pinch salt, or to taste
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons white sugar
  • 1/2 cup finely chopped radishes

Instructions :

  • Combine water, lentils, and salt in a saucepan. Cover and bring to a boil. Reduce heat; stir in balsamic vinegar and sugar. Cover and continue cooking, stirring occasionally, until lentils are tender, about 20 minutes.
  • Transfer lentils to a bowl. Add radishes; toss to combine.

Notes :

  • The lentils should soak up most of the water, but ensure there is enough moisture in the pan to prevent the lentils from sticking and burning by adding a little extra water if needed.
