Ingredients :

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 pounds country-style pork belly, sliced
  • 1 (15.25 ounce) can mango slices, with juice
  • 1 teaspoon liquid seasoning (such as Maggi®), or to taste (optional)
  • ground black pepper to taste

Instructions :

  • Heat olive oil in a stockpot over medium heat. Add onion and garlic; cook and stir until translucent and beginning to brown, 5 to 7 minutes. Add pork, mango slices and juice, liquid seasoning, and pepper; cover and reduce heat to low. Cook, stirring occasionally, until pork is very tender, 1 to 2 hours.

Notes :

  • Pork chops can be used in place of the country-style pork belly, if desired.
  • Mango can be cubed, if desired.
