- 2 pounds boneless, skinless chicken breast, cut into 2-inch pieces
- ¼ cup fresh lime juice
- ¼ cup fresh orange juice
- ¼ cup dark spiced rum
- ¼ cup soy sauce
- ¼ cup olive oil
- ½ cup apple cider vinegar

- 2 ½ cups panko bread crumbs, crushed fine
- 3 larges eggs, whisked
- 1 cup all-purpose flour
